Choose Your Own Adventure Cake

We've had bunches of family here for the last few weeks and everyone has a sweet tooth.  I decided to make a different version of an easy cake recipe I found about a year ago each day and have the family vote on their favorite version.  It's more of a coffee cake so it's great for breakfast.  You can adapt this recipe a million ways so get ready to choose your adventure!

Preheat the oven to 350 degrees.  In a 2 cup liquid measuring cup add:
  • 1/2 cup milk
  • 1/2 cup 
    • applesauce
    • jam
    • *or* vegetable oil
  • 1/2 cup 
    • juice
    • soda
    • *or * more milk
  • 3 eggs (stir well with a fork after adding the eggs, make sure you break all the yolks)
  • *Optional* 1 cup (or less)
    • raisin/craisins
    • mixed dried fruit
    • dried coconut
    • *or* mixture of any of above
When everything is added the measuring cup should be totally full.  If you want a stronger flavor you can add a little (1 tsp or less) extract as well.  I add the dried fruit or coconut to the liquid mix to plump the fruit.  I found that it keeps them from just sinking to the bottom.

Put the liquid mixture in the fridge while you grease a cake pan.  I like using a bundt cake pan, but you could used a 9" x 13" or several rounds or even make them into muffins.  In a big mixing bowl add:
  • 2 cups
    • wheat flour and/or
    • white flour
  • 1 1/2 cups sugar
  • 3 tsp baking powder
  • 1 tsp salt
Stir the dry mix well (I just use a spatula and kind of whisk it until it's blended).   Add liquid mix and stir well.  Pour everything into the pan.  If your using the bundt cake bake 35 minutes.  Anything else should be less time, just keep an eye until it's golden on top.

My family voted their favorite as the version with coconut and 7-up!

  1. Interesting. Cimmy (J) was telling me about this. Seems like you choose your binder, liquid, filling, and flour type.

    Bundt cake shape, coconut, and 7-Up makes sense... sounds like the soda pop cakes I see every so often.
