Adapted from Better Homes and Gardens recipe for "Ranger Cookies" (aren't all my recipes 'adapted'?):
1/2 cup of butter, softened
1 cup granulated sugar (or brown sugar)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla
1 1/3 cups wheat flour
1 cup old fashioned oats
1 cup chocolate chips
1/2 cup raisins (optional)
Preheat oven to 375 degrees. Mix butter and sugar (with electric mixer or if by hand go ahead and melt the butter completely). Add baking powder and baking soda, mix. Beat in egg and vanilla until combined. Blend in flour. If you're using a mixer then add flour slowly and stop using the mixer when it's not working anymore. Stir in oatmeal, chocolate chips and (if desired) raisins.
Let dough chill for a few hours - the old fashioned oats soak up a little moisture, so it's ok if it doesn't seem really thick at first.
Drop dough by rounded teaspoons onto a cookie tray sprayed with Pam (or non-brand oil spray). Bake for about 8 minutes - I recommend taking them out when they still look a little bit undercooked.
