Chiquita loves helping me in the kitchen! Blender recipes are the best, she can add the ingredients and press the buttons. We found a Healthy Cookie Dough Dip recipe. If you've read my other recipe posts I obviously love these bean dessert recipes, it's a great way to get Chiquita to eat more protein.
The first time I made this the results were un-photograph-able. I decided to add cocoa powder, which was delicious but makes the dip look like refried beans (that's if you're being nice, my husband suggested something much less edible).
I made it again without the cocoa, but of course I changed the recipe considerably. I wanted to use my blender because it gets the beans blended so much better than my Ninja food processor, so I had to add a lot more liquid. Here's my version:
1 can pinto beans (just because I had them on hand)
1 cup soy milk
1 Tbsp vanilla extract
pinch of salt
1/2 cup sugar (the original recipe wasn't nearly sweet enough)
3/4 cups oat flour (I ground the oats in my baby food mill)
3/4 cup wheat flour
1/2 cup dark chocolate chips
It is so good, but word to the wise - don't eat it all! Your tummy will not thank you. I served it with apple slices and animal crackers. Chiquita gave it her stamp of approval by asking for more!

DeleteAbsolutely! the original recipe didn't have the wheat flour. I added it since I wanted to use the blender so needed more milk. you can either reduce the milk or increase the oat flour.
